We'll be doing this drive in July with two adults and two intrepid kids (ages 7 and 9) and having some trouble finding interesting things to see/do/places to eat/particular routes to take along the way. Any suggestions?

Are you doing the 5 hr. drive in one day (leaving a few hours for an activity)? Google maps suggests a route through Nimes. If you went that way you could take a side-trip to Port du Gard, in part for the aqueduct, but more for the swimming and cliff-jumping, which my kids would have done all day. There are beaches just north of the Spanish/French border you could visit. We had a great time in Cassis hiking to the Calanques and cliff jumping there (but this might take more time than you have and is just south of Aix so would be an activity other than driving but would eat up most of the day). The DK France for Families guidebook had odd tidbits that others did not because of trying to appeal to kids. Good luck
