Most of Gascony and the Pyrenees is non-touristy, at least all the places I've been to. A good part of the Dordogne can be considered touristy, but it's so beautiful that it hardly matters, except maybe during the Summer. I'm inserting a link to my blog; 2016 includes the Pyrenees and Dordogne, and 2013 includes Gascony.
