We are going to the Dordogne and then over to Provence. Should we fly to Toulouse or Avignon? or another?
We would then be driving to Nice. Should we just rent one car for 3 weeks or avoid the drop off charges or rent a separate car in Nice?
To maximize the Dordogne you need a car otherwise you are limited to guided tours.
You could TGV Paris to Bordeaux rent the car there and drive to the Dordogne,
Avignon airport only has two seasonal flight from the UK, So you would be looking at Marseille
Toulouse and Bordeaux are the closest airports to the Dordogne,
For the Dordogne pick up a car in Bordeaux or Toulouse. Avignon is too far away. After the Dordogne you can then drive to Nice, which is a fairly long distance.

Since you will be ending in Nice, you should start in the Dordogne. So fly into Toulouse or Bordeaux (both are about 2 hours from the Dordogne, but Toulouse is a nice choice if you plan to de-jetlag for a day or so).
You need a car in the Dordogne and will want one in Provence. Ask yourself though why you would want one in Nice. Returning the car in Provence and taking the train to Nice may be a better option.
