Does anyone know what documents I will need as an American taking the train from Italy into France?

Thee is no border between Italy and France. You could, theoretically, be stopped and asked for your passport, but it is unlikely. It's like traveling from one state to another.
As far as Covid is concerned, those requirements change weekly.
