We stayed at the R.S. recommended Oceania Le Jura, close to the train station but well situated with respect to the town. The Owl Trail walk gave us a good overview. Get directions at the TI. Also took a wine tour with Authentica Tours. Very good day going to Beaune with a small group, I think 9 total. Stayed 3 nights. Would have liked more time in Beaune but otherwise very happy with our short stay. It broke up a trip from Paris to Rome (where we lived at the time).
Bonjour Jim, Dijon is always a good idea if you like architecture, history, good food and wine. Also don't miss the food market (only on Tuesdays, Fridays and Saturdays until 1pm).
Laurel gave you good advice about the Owl's Trail that you follow at your own pace . Check the small brass triangles with an owl on the floor to see the main sites. If you're brave, climb Philip the Good tower and its 316 steps to get a great view over the old town and churches.
I also recommend Authentica Tours that all my guests loved for a day or half a day tour. They also told me that with only 2 nights (one full day only) they felt they barely scratched the surface.

You can take Coco's word as gospel, as this charming lady lives in Dijon and has been of immense help to traveler over the years. She, of course, can't mention it on the Forum herself, but she does rent an apartment in the heart of the city. Kidding. We stayed in her apartment a few years ago during the Toussaint holiday break and were very happy that we did.
Great value all-around with attentive, reliable service. Best collection of Burgundian wine labels ever (see under glass of computer desk table top).
Possible daytrip: Semur-en-Auxois bus #49 dep. 7am daily.
