We will be in Paris this summer and have decided to spend one day at Disneyland. I see that they have train and ticket packages that take you from la Gare du Nord and back. Ticket wise, there is the Disneyland only option or the 1 day/2 park option. This would mean 40 Euro more for us. Realistically, would we be able to do both parks in one day?

You would not be able to do both parks but you could see some of both. However, I would just do the traditional Disneyland Paris park. Unless they've added a lot of new rides, the studios park is not that great. Check the list of current rides to see what appeals to you. But I think you'll have a more enjoyable visit if you just focus on one park.
