So we want to go see an opera at the Opera Bastille that starts at 730pm. However most nicer restaurants don't start serving dinner until 700pm at the very earliest. We'd like to have a nice dinner but doesn't seem possible or am I missing something? What do the locals do in this instance?

Restaurants might be open at 19h00, but often it is later, and I have never seen a restaurant open at 18h30.
If you want to dine before the event, cafés are generally open all day, and some very late at night.
