It’s been a long time since we visited Paris and can’t recall normal dining hours. We usually eat dinner at 7-7:30 at home but will be happy to adjust. Getting ready to make reservations.
I thought Paris had less regimented dining hours, certainly not like Spain or even Italy, so your normal time should be fine. Probably the exception might be finer dining where opening is not until 8:00 for example, or a place that only does one or two seating's, where you are essentially allotted a time slot. But in those exceptions, reservations would likely be needed.
7:30 is fairly early, 8:00 is more normal. You don't have to worry about second seatings pushing you out before you're ready to leave.
Brasseries are usually open all afternoon, but in any true restaurant, the very earliest that you can have dinner is 7:30 pm (and sometimes 8 pm).
So if you do want an early reservation like 7:30, you’re lucky, because it will be less in demand !
Restaurant start dinner service at 7 or 7:30. We usually book for 8 and are often the only ones in the place which then fills up by about 8:30. For dining before 7 you need to find places with continuous service. Restaurants usually open for lunch from about 12-2:30 and then close until 7 or 7:30 when dinner commences.
And then there are Cafes. Another option for eating, some are open all day such as Cafe Panis 09:00 - 22:00. After you arrive walk around your neighborhood and see what it has to offer in dining & hours.
