We will be there just 2 nights. I’d like someplace walkable to the best area to see things, I suppose like the city center or historic district?

Not a hotel, but a good one-bdrm apt. with location, location, and character: Logis des Fremyot, just off the main square on a quiet side street. Found it on booking.com, "Luxury Flat in Dijon," last spring. We walked there from the train station (maybe 7 blocks but flat terrain). Loved Dijon!

Both the MGallery or the Designhotel in the centre ville are quite nice.
