We are staying in Bordeaux for a week in May and we plan to take the train to Arcachon and then the bus from their to the Dune du Pilat. Has anyone done this without a car? We are also looking for lunch recommendations in Arcachon or near the dune.

There's really not much to add to your plan since what you've stated is exactly what you do. You take a train from Bordeaux to Arcachon and then a bus to the dune. The dune is in the middle of nowhere and if you don't have a car then the only food/services are right there on-site and the official website has that info:

I'm not a restaurant recommending person but by law all restaurants in France must post their menus and prices outside so if you want to dine in Arcachon you can walk around and window shop until you find a place you like. The tourist office website will have info:
And you can always google phrases like "meilleur restaurant arcachon" or similar phrases and find many blogs/websites on the topic. Maybe someone with restaurant experience in Arcachon will have specific recommendations for you.
