We have one day in port (Oct 12, 7AM-5PM) at Monaco and would like to see Nice and Eze, and maybe the Rothschild Villa or St Paul de Vence if time allows. Any suggestions for a guide with car or other ways to do this (train, taxi, Uber)?

There are buses to Eze and St.-Paul-de-Vence. I don't know how close you can get to the Villa Ephrussi de Rothschild by bus, because I just walked from the nearest train station.
I think you would need private transportation to get to all those places from Monaco in one day.
