I am retiring in June and would like to live in the south of France for 1 year. I would like to choose a small town/village that has alot of different day hikes into the local hills and mountains for great views. Do you know of a town/village that would offer this?

Please provide more information about likes, dislikes, interests, car?, and do you have the appropriate visa/ permission for a one year stay? Have you done any research at all?
P.S. The "south of France" encompasses a huge area, bigger than Ireland in size. Have you narrowed it down at all?
South of France is also roughly the size of Portugal plus Belgium plus the Netherlands. That's a lot for a hike.
Just throwing this out there, Pau. Not too big, but close to the Pyrenees for hiking.
Also I´d recommend taking a look at Komoot, or other French hiking apps to see what kind of trails are around different areas.
You need to consider obtaining a Visa along with where you choose to settle for a year. What you want and what the govt. bureaucracy grants can be challenging.
You might want to first make a visit to a region of France that could meet your needs. The RS guide can help with suggestions.
As others have pointed out, the description encompasses a lot of regions. Are you going to have a car or are you going to depend on public transport? A year encompasses the seasons, and so you'll want to consider your location carefully, as some places (mountains or coastal) have high seasonality.
The visa process is OK for a typical VLS-TS visateur visa as long as you have sufficient funds (or preferably, source of funds), qualifying medical insurance and a place to stay (but if you don't live close to a TLS Contact center, some travel might be needed). (ETA - there are some other docs and photos required)
