Can you do a day trip to Eze, Vence, and St Paul de Vence?
Is that too much?
Will you have a car?
You can visit St-Paul-de-Vence and Vence on the same day by bus. I have done it. I don't think it would be possible to squeeze in Eze.
With a car, I assume it is doable, but whether it is advisable depends on what sights you want to go inside of and how much time you anticipate spending there. The wonderful Fondation Maeght in St-Paul-de-Vence isn't a 30-minute stop if you are interested in art. If you just want to walk the streets in each place, enjoy the atmosphere and views, and grab lunch somewhere, I believe you can pull it off. I do not, however, know what sort of parking challenges you will run into. If you end up having to park far from the historic center of each place, walking back and forth could chew up a lot of time.

Bus from Nice to Vence and St-Paul-de-Vence. The bus company is Lignes d'Azur, and the website is www.lignesdazur.com . I'm having some computer/Internet difficulties at the moment and can't connect, but I think it's Bus 400, and I believe the same bus goes to both, but I can't guarantee it since I can't hit the Lignes d'Azur website right now.
I think Eze is reached via Bus 82 or 112 from Nice. Note that you want Eze, not Eze-sur-Mer.
Buses for Vence/SPdV and Eze do not necessarily depart from the same bus stop. When I was in Nice in 2016, the buses for neighboring villages stopped along the street rather than at a bus station. That situation may have changed.

Bus 400 is the line to St. Paul de Vence and Vence. Bus 82/112 are the ones that depart for Eze. As noted, it's tough to do in one day, especially in the peak season.
