This may be more informal than what you want, but take a look at Jardin de Bacchus in Tavel. The owner gives cooking lessons and seems to tailor her lessons to what you want. Our group was 3 couples and we loved it. There are reviews on Trip Advisor and the pictures don't do it justice.
