If you are just looking for a recreational class, I’ve enjoyed classes at both Cook’n with Class and La Cuisine in Paris
I’ve taken multiple courses with Cookn with Class across 4 visits to Paris. I’ve taken a pastry class, baking class, 2 food and wine pairings, an evening class, and a market tour/cooking class. The market tour / cooking class was the best.

I took a lunchtime souffle course at La Cuisine. I also enjoyed it and we had only 3 in the class so the instructor provided a lot of individual attention.

I took a cooking class at the Cordon Bleu, but it was a demo class and I didn’t particularly enjoy it.
I took a croissant pastry class at La Cuisine in Paris. The chef was very specific and knowledgeable- a great experience! I’ve made croissants successfully several times at home now.

We too have taken a class with Cookin' With Class, the macaron one, and loved it! I would love to do more of their classes.
Last year we bought gift certificates for online classes with La Cuisine. I still need to use mine, so hoping in the next week or so.
Chef Eric from Cook'n With Class is doing some very reasonably priced Zoom classes and a few freebies. I took an interactive course where not only could I see the Chef, but also Chef could see me and answer questions.
That would give you an example of what you could do at the Cook'n With Class school in Paris. I did see that the school is completely up and running.

Thank you all! A few years ago I took a trip to a cooking school in Provence. It was called cooking with Sylvie. I had learned about it through a class at ETBD. We stayed in her home and cooked by the pool. I'm trying to find something like that experience. Thoughts?
Cook'n With Class does a week in Uzès: big house with pool, markets, hands on classes daily, visits, lots of eating. Chef Eric Fraudeau had two sessions scheduled this year, as well as a week in Paris on the same theme: lodgings, markets, cooking, visits, eating.
There's also Le Pistou in Uzès. The chef owner, Petra Carter, is back doing classes for English speakers, but during the pandemic, she had also been teaching the locals (at their request) the Occitan and Provencal cooking of their grandmères. Check her website to see what's up and if she's going to organize a weeklong session next summer.
These two are both very experienced, classically trained, professional chefs with schools that have been around a long time. And the food is wonderful.

Any recommendations for the online french class by One Recipe Away French cooking class of interest. https://onerecipeaway.com/french-cooking-class/ It looks really good with instructional videos and detailed steps to cook at home in my own time.
They have the typical classical french recipes and some great original dishes that have given me inspiration to cook other french dishes for the family. I'll be taking this course up soon too
I will be checking out the local cooking classes when i visit France early next year :)
