We took a class in Dijon on a market day with Alex Miles. It was excellent. We went shopping in the market and also to a wine store and then made a delicious lunch. It was so good that my son ate all of his string beans and if you knew my son, you would know that was major.
@JHK how much did the class cost and how did you enroll/sign up?

I just saw your question. I went through my e-mails to confirm what we paid. We were a group of six: four adults and two children aged 7 and 15. Alex charged us 150€ per adult and the children were free. We found Alex's name by doing a Google search and emailed him and the rest, as they say, was history. We met Alex at Cafe Leo in Dijon and then proceeded to the market. It felt like he knew everyone we saw and he had a favorite vendor for everything. Our group was supposed to be just us but a couple who could only do the class on our day joined us. Alex emailed us and asked if that would be okay and we agreed. The female half of the couple was a wine importer from Australia and so we decided to add a visit to a wine shop to the morning. We all paid for the wine that was then served with lunch. The whole thing was great fun. Menu was rabbit in a mustard sauce, string beans, potatoes and an apricot and cherry dessert that made apricots one of my favorite fruits. My children still talk about the giant pig's head that they saw in the market and the trip was in 2013.
