Cooking Class

Our group took classes with Cookin With Class in Paris in 2019. They offer classes similar to what you are looking for and are very easy to communicate and work with. One granddaughter took the classic four course sauces class where she also learned to do processes like debone and prepare duck, fish and mussels. None of our classes involved a market visit but I think they do offer some. We were there in August when things were more limited.
