We have 1h25 min to transfer from Terminal 2E to 2F in June. We come from the US and booked a through flight. SEA to Toulouse. Will we have to go through immigration and or security?

You will have to go through passport control (immigration). Don't know about security.

I've been trying to decide if I should sweat or not over the short transfer time 1hr10min on my Air France flights from IAD to CDG to Nice... I guess most people are able to make it through immigration pretty quickly? Otherwise the airline wouldn't offer flights with such short connection times (I bought direct from the airline)? Or would they...

When we had to connect at CDG (entire journey on one ticket), they pulled us out of the line and put us right through passport control. Not saying that always happens, but it does indicate they are cognizant of the problem of tight connections.
