The Unterlinden Museum is a really good one. Can't guarantee you'll be the only tourist there, but it wasn't crowded in late June, so you might be.
I hopped on the train one day and went to Selestat. It's a pretty town that tourists don't seem to bother with since it's not one of the cute little wine villages.
You might consider a quick trip to Strasbourg for the day. The Christmas markets and decorations there are spectacular. It is a quick train trip from Colmar to Strasbourg.
We spent a week in Colmar last December and came across JY’s. Turns out it is a Michelin Star restaurant which we did not know about beforehand. Wasn’t too formal, friendly service and the food was sublime. And, as you would expect, pricey but a worthwhile splurge.
Based on my experience, it will be quite crowded in Colmar during the Christmas markets. They close at 7 pm and then the restaurants fill up. You may need reservations. The whole town is decorated and beautiful. Visit the nearby villages as well. And Strasbourg.
