I'm going to Paris in April and would like to learn more about cognac. I don't have time to do a side trip to the region, but are there any good establishments where I could do some tastings?
I don’t know of any bars specializing in cognac. However, the Ryst-Dupeyron shop at 79 Rue du Bac specializes in wines, cognac and armagnac. Greet your host with a “Bonjour Monsieur” and share your enthusiasm for cognac and I’m sure you’ll be invited to try a couple cognacs. If you then buy a couple bottles, you may be invited to prolong your tasting session.
The shop is about 6 blocks south of the Musee D’Orsay. (Metro: Rue du Bac).

Is Armagnac close enough to Cognac? I just returned from Paris, and I passed an Armagnac shop and show room on my walk back along Haussmann from the Musee Jacquemart-Andre.
