Has anyone used or seen others using walking sticks at Mont St. Michel?
Well sure. It's been a Christian pilgrimage site for almost a thousand years. Some of those pilgrims undoubtedly have trouble walking. I used a stick there - lots of stairs and stones. Nobody notices or cares.
Despite some slopes, cobbles, and steep stairways (there's a "street" option and a "walls" option), this is a 100% paved project. But if you are more comfortable with one or two walking sticks, it will not cause problems with other walkers. Be sure to plan properly for taking such aids on the airplane, preferably in your checked luggage. Note that organized tours of the interior can be close quarters. AFAIR, abbey interior is only by proprietary tour or religious service.
I’ll just add that I happened to be there once in a drenching rain. I felt like the cobbles got quite slick and watched several people slide down on the wall stairs. A walking stick seemed like a fine idea!!

Walking sticks sound like a great idea to me.
I bring and use poles whenever the footing seems precarious. I feel they will draw less attention than me sprawled on the ground.

This is only true if you consider cobblestones to be "paving." Of course, they are—but maybe not what many people would think of when they think "paved." I have seen otherwise fit, young people really struggle on that main street with those 4-wheel "roller" suitcases that roll oh-so effortlessly in perfectly flat airport hallways.
But in answer to the OP, I think walking sticks wouldn't be a problem on the Mont at all.
