Le Grand Colbert might suit: https://www.legrandcolbert.fr/en/. They have a blanquette de veau with mushrooms and sole Meunière. I wouldn't call it a bistros but the menu is IMO quite traditional.

That's where I usually check to see what's going on with Paris dining. They have several Paris specialists who can tell you where to find the best of these classical dishes, made in-house, not defrosted from a supplier.
On another thread, Simon has recommended Terminus Nord. That is a place that serves classic dishes. I haven't been there for decades, but when I went, it was classic and delicious.
I second Terminus Nord. It is quite good.
Have a look at Auberge Bressane as well.
