St Sulpice is famous for its organ music I am not very knowledgeable about music but I found it wonderful and moving.

You can look up church concerts using this website: www.billetreduc.com
Or Google Notre Dame's official website for organ concerts.
Saint Sulpice and Saint Eustache have regular organ concerts.
You might only get chorale music around the Christmas holidays.

We've been to The American Church in Paris. It's quite large, famous and on the Seine. This information about choirs is on its website but I would check your particular Sunday carefully because choirs can take a hiatus during some periods. Often times large churches will have concerts by visiting choirs in the evenings. https://www.acparis.org/adult-choirs

General information for each Sunday. https://www.acparis.org

There is a free organ concert at St. Eustache Church every Sunday evening at 5 or 5:30 - it is about 30 minutes long. This is one of the largest pipe organs in Europe, in the second biggest church in Paris. St. Eustache is near Les Halles in the 1st arrondissement.

We can also recommend St. Sulpice. An eyeful, interesting history, and the organ is apparently one of the world's best. (We happened to be in Notre Dame during a Mass and were shocked at the behavior of the tourists wandering inside the ropes, taking selfies, etc.) Here's a YouTube sample of the service at St. Sulpice: https://www.youtube.com/watch?v=CYCN3TRFtYM

You might also want to investigate an evening concert at Ste. Chapelle. See here: https://www.classictic.com/en/special/concerts-in-la-sainte-chapelle/216/ This isn't a religious service; just a string quartet playing classical music (but not too heavy - we are certainly not aficionados) in the spectacular, former royal chapel. No other tourists, just the paid concert attendees. (A vocal group joined the musicians when we were there; don't know if that's typical.) About an hour in duration as I recall; over in time for a nice dinner. No need to pay for the front rows; acoustics were fine farther back. Also, the combination tickets including dinner and/or champagne nearby looked like particularly bad bargains.
