Musee Jacquemart-Andre is open Christmas Day although you’ll need a timed entry.
It looks like Jardin des Plantes is open every day if thats an interest. There are some great old tree specimens in the arboretum area.

I’ve done a walk that I started at the steps of Saint-Etienne-du-Mont ( from Midnight in Paris), walked downhill by the Arenes de Lutece (Roman Arena) to Jardin des Plantes then back to Notre Dame area along the Seine. There is a sculpture garden along the river.
