What is the best route? Do I have to book train tickets in advance? If I book tickets and I miss it due to flight delays, what happens then?

To get from CDG to Bayeux, you need to get to the train station in Paris that serves Normandy which is Gare St Lazare. To get to the train station, I suggest taking a taxi. The current fare for up to 4 people is 56€. I buy tickets ahead of time and keep them on my phone because I do not like dealing with getting tickets at the station but others prefer to wait. A pre-bought ticket could be nonrefundable; you will have to look at the ticket terms when you purchase it. You could wait and buy the ticket online while heading to the train station. Tickets bought closer to travel date are generally more expensive. If you buy ahead of time, I suggest allowing four hours between your flight's ETA and the train's scheduled departure time.
Last May we booked our tickets in advance, but made them changeable. It was a savings over buying on the day. We managed to get through immigration quickly and were able to transfer our tickets to an earlier flight. It was super easy to make the change in tickets at the station. There is an option to take the Metro, but it is not direct. We opted to take a taxi to Gare St. Lazare. We were lucky and didn’t run into any traffic and were at the train station in ~35 minutes. However, if there is traffic, it could take up to an hour.
As mentioned before, there really isn't a direct train form CDG to Bayeux. You do have to get from the airport to downtown Paris first to pick up a train at Gare Saint-Lazare. Since they eliminated the RoissyBus, I now recommend a taxi—particularly if you are not already familiar with the trains and Metro. Only get a taxi from the official line outside of arrivals. DO NOT ACCEPT A RIDE from anyone who approaches you inside the terminal. This will happen! Just follow the little painted footsteps on the floor to the official line outside. and wait your turn. The line moves very fast, don't worry. You do not need to purchase a train ticket ahead of time, but if you do (I often do), I would allow more time than you think and just sit in a cafe in or near the station if you get there too early. Four hours should be safe, but the tickets aren't that expensive and do not sell out.
We were even in the official taxi line when a scammer told my husband it was the wrong line and that it was just for people wanting to go outside of Paris and to Disneyland Paris!
We bought train tickets on our phone once we got to the train station by official taxi. It was going to be very close to make it for a particular hour and I didn't want to sit at the train station when our flight was already delayed over an hour.
Taxi, train, uber — all of these are available, but in my opinion the best option is to book a private transfer in advance. We used a transfer from charles de gaulle https://atobtransfer.com/france/charles-de-gaulle-airport-transfers/, and it turned out to be one of our best decisions, especially since we arrived at 2 a.m. After a long trip, not having to worry about finding transportation in the middle of the night made everything much easier and more comfortable
Private transfer is probably the best way to go but way to expensive

I see no advantage of private transfer over a taxi. There are always taxis available within minutes, it is a fixed rate, and they can go in the bus/taxi lanes—which private vehicles cannot (including Ûber).
