In theory, all taxis accept credit cards. The practice is somewhat different so I would be sure that a driver had his credit card equipment operational before I got into a taxi. You do not need say anything, just hold up your card. It will be obvious what you need.
Make sure you use an official taxi from the marked taxi queues. Do not accept offers from those soliciting from within the terminals.

I generally pay cash, but most taxi drivers in Paris accept credit cards. I agree with comment about using taxi queues. They are found in every Paris neighborhood. Not many French taxi drivers speak a lot of English. Unless it is a common tourist spot, I write my destination on a card (even though I speak fairly good French). They are always appreciative.

The reason why this is not necessarily true is that drivers, knowing many people pay for taxis with credit cards, also know that they will sometimes miss fare opportunities if they cannot process a credit card. Not every fare has cash, particularly those at the airports.
If the first available taxi cannot accept a card payment, take the second. There is always a long line of taxis available at the airports and a taxis accepting card payment will always be available.
