I have planned a similar trip for this coming September. Since we are always brain-dead after our flight from the States, we are going to spend one night in Paris before traveling to Reims. We are staying at the Le Citizen on the Canal St. Martin because it is not only our favorite hotel in Paris, but it is an easy walk to the Gare de l'Est, the departure station for trains to Reims.

Neither my husband nor I have any interest in driving in Europe, so we use trains to get from city to city. I like to use loco2.com to buy tickets - it is very user-friendly and doesn't add on booking fees. Just be sure to pay in Euros.
I chose the Best Western Hotel de la Paix for our hotel in Reims. I like the location, it gets good reviews, and it is in our price range.

Reims and the Champagne country are one stop on a longer trip for us, so champagne tasting is not part of our itinerary.

There are regular, if not frequent, trains from the airport to Reims. A direct train takes a half hour.
I have researched the region on a very basic level, I think Epernay might be a great place to stay. Troyes also looks awesome, with many half timbered buildings. A lot of people say Reims is interesting largely for its cathedral and not much more— but I am still trying to figure out whether I agree. Also this region is somewhat within reach of Verdun, with WWI history.
Reims's Museum of Surrender (Germany's surrender in WWII) is also well worth a visit. A step back in time.
