Traveling to Chamonix 9/27-9/30/18 Having a problem finding a 4-5 star hotel/apt for those dates. Any recommendations?

That is not prime season so may be more likely dates are just not published yet for that time.
I would not be discouraged yet...
I would identify a place or two that you like, seeing their rates for dates in late August / earlier September and then email them with your dates.

I Googled Chamonix and found almost a half dozen hotels in that quality range for those dates. Try Booking.com.
