I have taken the train but not one departing less than three hours after my flight's ETA.
TGV trains to Bordeaux depart CDG at a regular frequency. Some of the itineraries require a change of trains.
Our last flight into CDG was carry-on only, and we were ready to board a train to Lyon at the train station within 20 minutes after landing. Unfortunately, a bomb scare at the train station delayed us for four hours.

If you are already in CDG, it may make more sense to fly. You would have to go across Paris to get to the train. I don't think it would be faster.
There is one other thing to consider. The train will take you to the train station, flying will land you at the airport. Car rental options at the airport maybe better. Getting into Bordeaux from the airport is relatively easy.

Hi Gary! I do this route often and switch between plane and train, depending on which has the better price. In fact, I am doing this route in a few weeks via train. As Kim mentioned, you do not have to go to Paris to catch the train to Bordeaux. There are two direct trains (typically) from CDG to Bordeaux St. Jean I think 8-ish and 4pm-ish (16h). However, there are loads of others where you change trains at Massey. This is what I usually do as my flight from West Coast lands around 7 or 8am. Changing the train at Massey is super easy! You don't even leave the platform. It's typically a 40 min wait between the trains. Sometimes, the cost to fly is cheaper than the train ticket though, so I have flown as well. I suggest you use the SNCF app (the official French Train company) to look at your train options/costs and to book your tickets if you chose to take the train. I hope you enjoy your trip!
