I am looking into easiest ways to get from CDG to Bayeux and was hoping for some guidance.

The easiest way is a taxi (fixed rate €50, I think) from the airport to Gare St. Lazare, then the train to Bayeux. Especially good if you're jet lagged and have luggage.
I like CJean suggestion, especially if there are 2-4 people, it makes the cost about the same as any other transportation option.
'easiest' is taxi-- no hauling bags; no finding/changing trains--- if it is a bit more expensive, treat yourself- you deserve it.
There is also a bus shuttle from CdG to St-Lazare.

Second recommendation for the RoissyBus. It picks you up right outside of arrivals at CDG, and drops you off right next to the Opera Garnier—a 7-minute walk to Gar Saint Lazare. Plus, you get to actually see the city on your way in, rather than tunneling underground. Also, not stairs or escalators with heavy bags and it is only €12 p/p.
