We are traveling Minneapolis CDG Florence next week booked with Delta with a 1 hr 45 minute layover time.
What is the quickest way to get from 2E to 2F and is it doable in 1 hour 45 min?

that is a generous time to make the connection. You remain airside and will go through schengen immigration/passport control with other people transferring airside. It is good to have a clear idea of what you need to do because you need to step lively -- NEVER follow passengers to immigration/baggage claim -- follow signs for 'correspondence'. The entries and signs will probably be yellow.
Here is a site that shows you how to do it: you do need to know which satellite building of Terminal E you are landing at -- some require an airside shuttle;

You might look at previous flights to see which of the 3 sub terminals of E your flights use
Your luggage goes straight through and customs if any will be in Florence.
I agree that this is doable if you get a move on. Where are you seated on your incoming flight? IF you can be as close to the exit as possible that will help - either Delta ONE, which is allowed to exit first, or Comfort Plus.
Will you have carry on or will your luggage be checked? Be prepared to pull out your ziplock of liquids and these need to be IN a ziplock, not a plastic pouch which is the same size and is usually OK with US TSA agents. As you approach the security lineup in 2F, empty your pockets, take off belts/scarves and stow them in your carry on. Don't bring any water or fruit from the plane.
Make a pit stop on the plane about an hour before landing.
Heed what Janet said about following the sign for Correspondence/2F. You will come to kind of a scrum where most passengers are entering the Immigration Hall for 2E and you have to thread thru this to get to the hallway that takes you to 2F. Don't stop until you get to the 2F gates. THEN you can make a comfort stop and/or pick up something to drink at the small Relay store near the gates.
I recommend you look to see when the next flights to Florence leave JUST as a back up in case your incoming flight is delayed. With a little luck your pilot will catch the jet stream and get in a little early, lol!!
I timed myself last September from stepping off my Delta flight from Seattle to getting to the gate at 2F for my flight to Milan and it took me 1h5mins. I walked at a moderate pace. My Milan flight started boarding earlier than the reader boards said so go directly to your gate to check things out.
What Pam and Janet said. It took me 1 hour and 15 minutes but that's because I didn't have my stuff in a ziplock bag and had to transfer them (under the agent's glare) from my clear toiletries bag to the plain zip lock she handed me. Don't be like me. 🤪
Janettravels44, your link is very helpful! I will be going through CDG and not having much extra time to make the connection. I’ll be checking what time the next flight is offered to Malaga when the day gets close, just in case.

I'm having trouble finding which hall of 2E we are landing in but hopefully not M, where you have to take the shuttle.
Will take heed of all the other hints like bathroom on the plane and liquids in ziplock, but we are seated in Comfort Plus so at least get out a bit quicker.

The last 2 or 3 times I landed on a flight from Seattle we came in at an outdoor stand and had to take the shuttle. The buses were waiting and it actually was easier to get to Immigration.
Don’t fret about this because there is nothing you can do about it.
@Mardee…I can imagine the glare! The woman in front of me had an OJ and Yogurt in her purse which she had to dump. As she was doing that the security guard looked at me and rolled his eyes.
