We’ll be in Cassis and nice for a several days in July and would really like to visit the lavender fields. Any suggestions of how we could do this?
You ideally need to work something out from Cassis because Nice is quite far from the field areas.
If you have a car, you can just drive to the Valensole plateau; the best fields are between Valensole, Puimoisson (the D56 and D8 are lined with fields), and Moustiers Sainte Marie. Moustiers is worth a visit while you are in the area.
If you do not have a car, you would need a tour, and I cannot help much here, sorry. Nice being a bigger hub, there might be more tours from there despite the longer distance.
Last but not least, you say July: is it before July 20 or so? Later in the month, most lavender is harvested and you have to go higher than Valensole.

I don't know if this helps or not but you might be able to keep an eye on the updates as to where/when the lavender is blooming in Provence as the specific timing can change each year in different regions and according to climatic conditions so try googling "floraison lavande provence 2023" and you'll get results for several websites that should give updates on how the lavender bloom is progressing throughout the season in various areas of Provence. Then, depending on when you'll be there and which areas might be experiencing peak bloom you can decide on what modes of transport might be best to access the bloom areas from wherever you might be based at that time. I'm sure you understand that most lavender fields are in the countryside and not accessible via public transport and will require a guided tour, taxi or rental car to reach them but you never know:
