Is it worth paying the @ 55 Euros for this in order to save money on approximately 6 train trips from Paris to places such as Versailles, Giverny, Fontainebleau?

If you're going to be staying in Paris for a few days, both Versailles and Fontainebleau are covered by the Navigo Decouverte pass at about half that price for a week.
I don't think the Carte Senior gives you any price breaks on those trains; you can get a senior price to Vernon just by being old. The long haul trains have senior rates with the card but that would be for trips to places like Strasbourg or Nice -- So no, not worth it for this sort of itinerary. The card would be meaningless for the RER to Versailles for example.
If buying a longer-distance train ticket, always mention that you are a senior, but never choose a fare that says "Carte Senior." I don't think you're actually likely to buy the wrong ticket, now that you're aware there are two different types of senior discount.
