Reading the posts about the Olympics' hype in France next July, I'm wondering if it's too early to book a car (automatic) for next July in Nice?

Demand will probably be higher than usual, but it is hard to say how much higher!
I suggest you book anyway, because the vast majority of bookings are refundable. Then, check periodically, and rebook if the price dips. That is what I always do
