Central Colmar is very touristy, but for a reason: the architecture is lovely. You can spend quite a bit of time just walking around.

There are short trips on the canals on small boats; I haven't taken one of those.

The Unterlinden Museum is good; its showpiece is the Isenheim Altarpiece, an acknowledged masterpiece restored not too long ago.

There are very picturesque wine villages in Colmar's orbit. The tourist office in Strasbourg or Colmar will be able to help you plan a drive to several of them.

We loved Colmar but you can take the train from Strasbourg rather than drive and deal with the hassle of parking. Colmar is so picturesque. Go to the market there and try some of the wares/pastries. We loved Colmar so much that we went back at Christmastime for the markets.
