Has anyone experienced the bus/restaurant "Bustronome" in Paris?
I have not done so, but my take would be in the negative. Any meal eaten in a moving vehicle is by its very nature awkward. If one pays enough attention to controlling knife, fork, and wine glass one misses the passing sights. If one pays attention to the passing venues one ends up with gravy in the lap. My clear preference would be to separate the two, i.e., take a scenic bus tour and then eat in a nice restaurant where the table doesn't move.
We did it and it was fabulous! The food is prepared on board and very good quality, the wines well matched if not particularly special. They have a clever system for keeping flatware, plates, and glasses secure. The ride is slow and the monuments gorgeous . Everything was well timed. Yes, expensive, but where else can you? And the food was better than we have had in many Parisian restaurants.

Novel dining experiences can sometimes leave lasting memories. I know eating at Dans le Noir in Paris, where one dines in total blackness, served by a blind waitstaff, gave us a different perspective on the role sight plays the dining experience, as well as trials the blind must face. https://paris.danslenoir.fr/en/home/
