Have you been to the bullfights in Arles or Nimes? I would like to attend when we are in Provence since they are non-violent (unlike Spain). I cannot seem to find anything online about schedules or acquiring tickets. If you have any information to share I would appreciate it.
I have not been. The term you want is "bullgames" rather than bullfights. Try going directly to the Arena web sites. I don't know how far in advance schedules are published and I don't see Rick's book discussing them for Nimes.
Newsstands and TIs have printed sheets that list the real (not staged for tourists) events in smaller surrounding towns. The courses in Arles rarely fill up so no need to pre-purchase, and I think those in Nimes are pretty fresh, along with much of the refurbished buildings, and therefore more like stage shows than actual cultural events.
I've been to a bullgame (course Camargue) in Arles. It's super fun. No need to buy in advance and the tickets should be around 10 euros (if they are a lot more, you are looking at a different event).

This website shows the dates, times, and locations for bull games in the smaller towns in Provence. The matches are part of a league. Most of them take place on the weekend, but there are some during the week. For example, on Tuesday June 7 there is a match in Pernes Les Fontaines, about 30 minutes from Avignon, at 3 pm.
Important language note: French bullfighting is "course Camargaise" as previously mentioned. Spanish-style bullfighting where they kill the bull (which is also practiced in the South of France) is "tauromachie".
If you're doing the driving consider combining the visit to Pont-du-Gard with the courses in Remoulins -- using the calendar linked above you can see that the better league players perform there in Remoulins...
You have plenty of information above. I'll just say that we went to a bull game in a small town. There were all locals except for one group of teens. It was a lot of fun with the men jumping right up next to you to escape the charging bulls. At 'half time' we went out and got the Provence version of fried dough. Take you camera, lots of good pictures of the action and the men grabbing the bow from the bull's head with a type of hook they held in their hand. One bull gamer had to be taken away to receive medical care.
