I have only used easyjet in the past but vueling has better flight times.. Is one better than the other? Opinions please :)

Tracy I have used Vueling ( and Easyjet).. I always just pick the cheapest one with the schedule I want..
On Easyjet you are allowed one carry on.. not one carry on and a purse.. just one carry on period. On Vueling you are allowed a purse ( or laptop) and one carry on.. minute difference, but thats it.
In both cases be sure to read luggage restrictions carefully.
There is nothing wrong with Vueling.
