Is it practical to drive from Bruges to the Charles de Gaulle airport, leaving Bruges in the morning and arriving at the airport in time to drop off a rental car and make an 11:00am flight?

Take it from one who got shut out of his scheduled flight home by arriving at the United check-in counter 55 minutes before departure, fagetaboutit! You should be turning in the car minimum 9 am, 8 am is better. So you have to leave Bruges when? 4 am if you don't hit any traffic and you don't get lost.
PS. They did get me home through Munich.

There is a Sheraton right in Terminal 2. There is a Hilton and an Ibis by Terminal 3 with a shuttle tram stop nearby. Cheaper options off the airport property.
