My husband and I will be in Nice for 5 nights. I am looking to book an ocean excursion (aka boat ride) that would allow us to see the beautiful coastline and beaches from a perspective distinct from the shoreline.
Any suggestions? We would prefer a half-day rather than a full day but would consider either option.

There are a number of short 1 hour boat tours that leave from Nice Port and voyage through the Bay of Villefranche (and Cap Ferrat) all the way across the bay. There are some that boat down to Monaco. Others go for half days to Mala Beach. There are also longer ones for dinner/apero and for private ones. I think a lot of these are seasonal.
There are also ferry journeys to the nearby island of Ste Marguerite (from Nice/Antibes/Cannes) and St. Honorat (from Cannes_ Trans Cote d'Azur is an operator (they also go between cities). There is a super long day trip to St. Tropez as well.

I am also spending 5 nights in Nice next month. I am planning a day trip to Monaco with my son who is a big F1 fan. Instead of going by train I am going to book with a company called Trans cote d'azur. We will get on a ferry at 9:30 am, take a 45 minute boat ride to Monaco, then they pick you up for a boat ride back around 5 pm. I am sure they have other offers as well.
