France is not a big breakfast country.
We stayed in L'Isle-sur-la-Sorgue and in the morning many of the restaurants along the canal on the south side of town were open for breakfast service. Also there are several boutique bakeries offering fresh baked goods, and presumably coffee, but most of these don't have seating. No firm recommendation but there are many to chose from so pick a view and seating you like.
It was an obviously touristy but nice experience to see the canals and area effectively empty in the mornings and grab a couple of pictures without people in them.

Since lunch is the main meal for a lot of people in France, breakfast is pretty light even in cafés that serve it: beverage, baguette with jam and butter, croissant and juice. Maybe you can find a place that will make you an omelette. However, brunch is now trending, so you will be able to find that on the weekends.
Your hotel buffet breakfast might be the best you can do.
I guess. My family are breakfast ppl - so I know it will be a challenge. We typically eat eggs, or yogurt, berries, and definitely croissants. Its more about cute places where we can all eat together.
