you can't check luggage on Eurostar so everybody carries their luggage on.

Eurostar has airport style luggage screening but there are no restrictions at all on liquids.

Even though we travel with just our backpacks, we successfully checked a backpack home from Europe with two bottles of wine inside. When we bought them, they were put into a nice cardboard two-bottle carrier and we wrapped them well in lots of dirty clothing in the center of the backpack. I was doubtful, but it was my husband's pack and he wanted to do it. They arrived in perfect condition after traveling from Dubrovnik to Vienna to Washington DC and then home - a lot of handling. I mention this because I can't image decanting a bottle of purchased cologne into smaller bottles. You might just wrap it up really well, or even put it in a ziplock, and check one of those carry-ons on the way back. One the way home, we figure it's not a big deal if it gets delayed.
No restrictions on what you bring on any train. You are limited only by what you can carry.
It is quite normal to bring food and drink on a train to eat during the journey. A few glasses of wine helps the trip pass.

I agree with Tigerfan, in terms of leaving the purchased cologne in its original bottle, packing it in your suitcase & having that suitcase checked, instead of taking it as a carry-on (when you fly home)
We always travel with carry-on luggage, & we almost always check it on the way home.
