Bordeaux Airport Advice

We are booked on an Aer Lingus flight from Bordeaux that leaves at 10:45 AM on an October Monday.

1) How much time should we allow at the airport before the flight?

2) I see they sell "Fast Track Access" for 8 Euro per person. Would that be worth it?

3) What do you recommend for a decent hotel for a night before the flight? Ideally we could get there from Bordeaux Center the night before, then have a short trip to the airport in the morning.

I replied in your other post but here is my response again:
This is the flight to Dublin (I'm guessing) and we take this route quite a bit. Giving yourself 2hrs before is PLENTY of time at Bordeaux airport even with the new EES. Only once, in the middle of high season summer, did we need the whole 2 hrs. Typically we are through with checking bag, security and passport within an hour. And it is important to note, that the passport control does not open early (you do have to go through passport control as you are leaving the Schengen area.) It typically opens 1.5hrs before the flight (there is a sign above telling you when each non-schengen destination opens just before passport.)
As for fast track, I've never needed it. Bordeaux is a smaller airport and everything runs quickly and efficiently.

As for hotel, you could stay in your Bordeaux Centre hotel as it should be fairly easy to commute there from the centre. Or there are lots of good hotels by the airport. The Hampton by Hilton at Bordeaux Airport is nice and has a shuttle to/from the airport.
