It's very hilly there so I hope you enjoy that! Beautiful countryside, but I don't know anything about where to rent bikes.
My husband and I were in that area this summer with Outfitters Bicycle Tours http://outfittertours.com. They do self-guided tours and while you might not need as much as they offer, they might be able to steer you to bicycle shops and other resources. They were very gracious and friendly.
It is quite hilly as mentioned in the first response. I do not recall seeing a bike rental place in Gordes, but there is (or used to be one) in L'Isle sur la Sorgue). I am sure that Googling that might get you something. luberon-biking.fr/en will deliver the bike to you. I believe that they are based in Roussillon.
While we have not biked in the Luberon, we have driven many of the roads, especially in the rural areas.
I have noticed steep drop-offs along the sides of the roads. Those little ditches are not wide but are deep. The roads are very narrow and with the drop-offs, I believe it would take a good biker to to be able to stay on the roads. The area is beautiful and in mid September, there will be less traffic with which to contend.
We are not bikers so we haven't looked for bike shops.

Rick's Provence & French Riviera book suggests some easier biking routes around Isle-sur-la-Sorgue and Velo Services in that town. They have route info online, but it's not working for me today.
Give these guys http://www.location-velo-provence.com/en/ a try. They are specialized in electric bikes that give a bit of a helping hand when you are heading up hill. Plus they have lots of good suggestions on itineraries. We've had guests who used them and were very satisfied.
