A few years ago we took the train to Loire valley and did a day bike trip through some towns and wineries. We are coming back to Paris in Sept and would like to do something similar in a different town. Any ideas? We will not have a car. thanks for any advice

For in and around Paris you can google: French Mystique (Bike) Tours. He is an American living just outside Paris and offers all kinds of bike tours. He was active here on the forum for a while, no idea if this is still the case.
