We'll have a rental car.
Staying in Provence (probably Vaison la Romaine) Sunday & Monday.
Departing Tuesday, after spending the morning at the market.
It's a long drive, but I can't seem to find trains that make sense from Provence to Mont St Michel area.
If we don't drive the whole way ourselves, we'll pick up a rental car in Mont St Michel area as we'll continue on to Normandy afterwards.
Should we just train Marseille to Caen, pick up our rental car there?

Wow--that's a big jump. Rome2rio puts every route at 10 hours via train or plane.
Here's what I would do:
Drive to Avignon and turn in your car. Take the TGV to Gare de Lyon in Paris. (almost 2.5- 3 hours + driving)
Transfer to the Gare Montparnasse. (1 hour to transfer, get oriented, plus time to wait for your train--so up to 3 hours worst case)
Take a TGV to Rennes. ( a couple of hours)
Rent another car there to drive to Mont St. Michel. (time to rent, get out of Rennes city traffic, get to Mont St. Michel)
Adding it all up, it's about ten hours.
If you are going to use a car I would skip the market and take a (or a few) serious break(s) underway. You can pay a visit to Bourges for instance, just to get out of the car for a while.
There are trains from Marseille to Rennes, some with a change, some are direct (it takes a bit more than 6 hours). From Rennes, you can go to Mont Saint Michel renting a car or by public transportation.
Indeed, train 5350 goes once a day from Marseille or Avignon to Rennes without making you change in Paris. It leaves Marseille at 8:44, Avignon a half hour later.
