Best quality traditional, old fashioned French cuisine in Paris?

Simple question... Which restaurants make the best traditional, old-fashioned style classic French dishes in Paris and are any of them open in August? Thank you!

You'll have to more specific about the food - nowadays, hamburgers and pizza are "traditional".
You can use TheFork to see if restaurants you want to try are open in August - just do a dummy reservation.
ParisByMouth's website is not always reliable.

I was happiest with the cafe/street food choices in the 6th. My traditional old fashioned is a crepe. I didn't have any sweet ones mostly buckwheat ones with ham and eggs, or some combination on their menu.

Brassiere Mollard near Saint Lazare train station has traditional set menus. It is very beautiful and has fun traditional waiters. We enjoyed our meal there very much.
