Simple question... Which restaurants make the best traditional, old-fashioned style classic French dishes in Paris and are any of them open in August? Thank you!
You'll have to more specific about the food - nowadays, hamburgers and pizza are "traditional".
You can use TheFork to see if restaurants you want to try are open in August - just do a dummy reservation.

I was happiest with the cafe/street food choices in the 6th. My traditional old fashioned is a crepe. I didn't have any sweet ones mostly buckwheat ones with ham and eggs, or some combination on their menu.
I can recommend Le Volcan in the Latin Quarter. See http://restaurant-levolcan.fr/?lang=en
Check out the menu. Is this the kind of traditional food you're referring to?
Brassiere Mollard near Saint Lazare train station has traditional set menus. It is very beautiful and has fun traditional waiters. We enjoyed our meal there very much.
epltd... Volcan has Tartiflette and beef bourguignon!! Thank you!
