Best option to travel from CDG to Bayeux

We are planning on going to Bayeux from Paris, CDG (after <2hr flight) and staying for 3 days in April. 3 adults. We will have a quite a bit of luggage. I would like to take a taxi to St. Lazare and store our excess luggage in the area and then take the train from there. The other option would be to rent a car and drive there and just take all our luggage with us. Is one option better than the other logistically? Driving time per goggle maps is over an hour longer than train time so I am leaning towards the train, though we have not stored luggage in Paris before so not sure if this is a good idea.

You may get a better answer if you give the month of the year, the number of guests, and whether you plan to rent a car for the Bayeux area in any case. Do you have experience driving right after a seven-hour overnight flight? Would you rather drive anyway?

I personally, in your situation, would consider taking a taxi from the airport. It's not a lavish expenditure, but I don't have the estimated cost at hand. Others have pointed out that St. Lazare isn't that far from Opera Garnier, and there's an airport bus that goes right there. The question is where the luggage storage is.

How much luggage will you have? Ideally you would only bring the amount of luggage that you could manage yourself. If you are arriving from a transatlantic flight, driving to Bayeux from CDG is a really bad idea due to the risk of jet lag causing driver impairment. It's a risk not to be taken lightly, especially with a drive of over 3 hours. If you need to get to Bayeux on your arrival day, take the train.
