My family has a 10 a.m. returning flight from CDG in early August. We're staying at a hotel on Avenue de la Motte Picquet. It looks like the Easy Go Shuttle might be the best. I'm worried about timing since I've heard CDG is huge and confusing. Your thoughts, please?! Thanks!

When do you have to be at the airport meaning where are you flying to and which airline? Some airlines, American for example, are telling travelers to be at CDG 4 hours before their departure time. In any event, a shuttle is not a great idea. Order a taxi the night before and pay 62€ for a taxi for up to four people from your hotel to CDG.
We're flying Delta to Seattle. There are 6 of us. Apparently this shuttle picks up 3 hours ahead and drops off at the correct terminal 2 hours before flight departure.

For a family a taxi is the only sensible choice. It is 55 for 4 plus a 7 Euro reservation fee. If there are more than 4 of you there is a 4 Euro cost for each person above 4; you call the G7 English line the night before and make clear how many people and how much luggage. They usually ask those things and will send an appropriate sized vehicle. With a 10 am flight to the US you need to leave the hotel at 6 am unless your airlines suggests an earlier time. For a trip within Europe, you need to leave 3 hours ahead. Shuttles are not a good choice in Paris and for a larger group like yours not cost effective.
Just saw your update. Your timing is potentially disastrously wrong. You need to be there 3 hours ahead not being picked up three house ahead. You may get through with time to spare, but you could quite possibly miss the plane with only 2 hours at the airport. We have flown many times from CDG when we barely made it with 3 hours. Some airlines are suggesting 4 hours right now, but unless your airline states that 3 hours should be plenty.
A taxi for your group will cost 70 Euro including the 7 Euro reservation fee. G7 will send a car that holds 7 for a group this size. Whatever you choose arrange pickup 4 hours ahead and not 3. 3 was never enough and with today's heightened security it is even less likely to be adequate.
Concur with Janettravels44. Two hours is cutting it too close. Consider: If you save money but miss the plane, the difference between the shuttle and the taxi is insignificant compared to having to get rebooked on the US bound flight. CDG is big, and it can be very confusing.
I doubt 6 people save money over a taxi by taking a shuttle. One person does, two people maybe -- but once you get past that a shuttle is likely to cost more. The train would cost about the same as a taxi and be a hassle with luggage.
I really appreciate all your responses. My additional question is, if we go with the taxi for 6 people (all adult size!), will the vehicle they send have plenty of capacity for luggage? I think we each have a bag and there may be a few additional. Is there a preferred taxi service? We've never been to Paris.

Carefully read again the response from Janet above for the answer to your question.
The day before you are scheduled to depart, tell the hotel to call Taxi G7 (not a car service) and remind them to confirm that you are a party of six with luggage. The taxi sent should hold all your luggage unless you just have way too much. You ask a good question because I have been in some taxis for six that had very little luggage space. You say that you each have a bag but if you each have a huge bag, that could be a problem.
Also, I cannot stress enough how much I agree that you should get to CDG three hours or more (if your airline requests it) before departure time unless you are flying in business class in which case, If you are flying business class, you could get away with arriving with less time but I would not do it.
