I am able to plan my trip such that I could visit one of the following markets in Provence, which of the following would be the most impressive?
Orange or Vaison la Romaine or St Rémy de Provence?
The Wednesday market in St Remy is outstanding......it was probably our favorite after shopping one a day when we were there last May. We did not attend the other 2 you mentioned but did go to the market at Gordes and loved it. L’Isle sur la Sorgue had a great Sunday market too!
I agree that St. Remy is a great market (the Wednesday market specifically; Saturday is much smaller). Vaison is also outstanding, as is the Isle sur la Sourgue Sunday market.
Of the three you mention I have only been to Vaison and it was wonderful. I've been to a lot of the smaller towns and I liked them all but my all time favorite market in Provence was Isle Sur la Sorgue.

We enjoyed both the Arles sat market which is huge, and the St-Remy wed market
Don’t think you would go wrong with either but St-Remy might be easier access/parking
Arles market is huge, on one big stretch of street basically. Everything under the sun, with endless food options. Vaison-la-Romaine was on another level for me though. It’s market is dispersed through the winding town streets, with probably just as much as Arles. It was a joy to explore and I actually bought some stuff to take home there. Staying in town helped. Highly recommend Vaison.
St Remy is a wonderful place. The Wed market is great and stretches through the streets of the centre of town. It is a wonderful experience. I would highly recommend it!
